The piston went back in fine but does that guarantee it's OK? I'd rather err on the side of caution. Should I get a new caliper and if I do should I replace the rotor and if I replace the rotor should I get 2 or is 1 new one OK?

In the shop one of the first checks was to see if the pistons would go all the way back in, this was usually done before anything was taken apart. If the piston would not go in the caliper was replaced. I do that on my brake jobs.
