Scott, what's on the sidewall is _maximum_ pressure. What's on the door jamb is _recommended_ pressure. The maximum pressure is the pressure up to which you _might_ inflate if you were carrying an extra heavy load, and still have the tires not explode. It is not intended for ordinary daily usage. Some folks do inflate tires to a value somewhere between that recommended by the car manufacturer and the maximum that is on the tire sidewall to increase gas mileage (while decreasing tire longevity -- go figure).
