Zero leg room. Instead of the optional single middle seat, you could install a 2- person bench from a regular van. These are similar to the ones offered as an option on Westies. The main difference is the lack of armrest on the galley side. I believe that gives you 5 seats so far including the driver. Add two more in the rear bench with a possible 3rd in a pinch and you've got the 7-8 person capacity that you seek. As David Beierl suggests, you might want to consider much smaller friends. Either that or get more HP.
