Kevin, I see you're getting some good advice on high-end stuff here, but since you didn't say that you particularly wanted to spend a lot of money (and this is going in a vanagon, right?--sorry I couldn't hear you over the noise) let me recommend a JVC KD G340 for $90. It has removable faceplate, CD/MP3, a remote that actually turns the thing off, and will work with your ipod out of the box (if you want full ipod interoperation through the remote and ipod display on your faceplate, you have to buy a plug-inmodule--$15 ebay item). It's satellite radio ready, too, with a similar module.
