Under the seat is a Mdl 40 Presto cooker. The ancient wooden handles stow neatly inside. It's been modified to accept a Mirro Jiggler (5-10-15 PSI) It has served me and probably many others well. It gets inspected often. Perfect for those Red Mountain Pass anasazi beans. Or every bodies favorite, Lengua con chipotle. Does artichokes in 10min. Brown rice in 5min. Black beans, bunnyquick, pre-soaking controversy can be found below.

Now if I can just remember where I put that study on Waldheimers disease, or my reading glasses or the spare car keys, or what I was just thinking. Yes I cook in aluminum and yes acidic foods will slightly dissolve aluminum, the attributed long term affects are wrinkly skin, falling hair, presbyopia, diminished capacities and horrid age spots, and the onset of continental drift dementia. Hey, you gotta blame somebody!

The major trick to using the jiggler kind is to not leave the premises, follow the rules of what NOT to cook in your Mdl 40 and how much to put in it. Oh yeah, listen for the jiggler's refrain. If it stops, something is amiss, pull the pot off the fire and let it cool. Do not open until you can touch it with a bare hand. It could be plugged or it could be dry. Either case will result in a full sixpack of unpleasantness. Use a timer and take it with you so you don't overcook which will result in a mediochre, easily masticated mess of previously palatable provisions. Very offputting if it was your last bag of butterbeans and you're just south of Barcroft Laboratory in the White Mountains at 12000ASL

The Mdl 40 doubles as a spill resistant container to pre soak beans, lintels, limpets, or sox. Just put the goodies in, add the soaking liquid, attach the top and the jiggler and secure it to the side of the pottybox or something. Drive merrily along and the goodies are soaked/washed as you wander.

In a pinch you can use it to allow your sourdough to rise more vigorously by placing Mdl 40 with cover in the sun and checking often.

Of course without the lid attached it's a fine pot in it's own or with the lid attached and no jiggler it can simmer without losing or loosing too much liquid.
