Michael, are you willing to pay?  I assume so.  Then there are numerous places on Rio Frio, the Llano, and some on the Nueces with campgrounds.  Google Llano River camping, Junction Texas camping, Frio River camping, and Nueces River camping.  You'll get hits.  Some of these take only a handful of visitors at a time.  Most have cabins as well.  These places run the gamut from full service RV camps (not for me) to landowners who have a "picnic grounds" with no facilities and few guests.

Surely you know that these spring fed rivers are clear as tap water, cool (name Rio Frio is appropriate), and that the Hill Country was God's favorite gift to Texans, though most of it has now been polluted by tourists on the make for a t-shirt, an ice cream cone, and antiques.  But the rivers remain nice.  Of course, if you want to fight the crowds, Garner and South Llano River State Parks remain beautiful.

You've missed the peak of the wildflower season, but any time in Texas is great.

Don't blame you for asking, but as one who does have relatives with what you are looking for, I know better than even to mention it to them.  Used to be (way back in the day) that anyone with river front property would let in campers for a dollar or two a day.  But back then, most landowners were making a living off the land.  No more.  Most are absentee, recreational users.
