Hi Mike,
I've redone my entire camper interior in my split 66 back in 2006.
I took apart the old interior and used it as a template before giving it away.
I used a really nice birch plywood 1/2 or 5/8 for the cabinets and birch veneer 1/4 for the wall panels and ceiling.

I would recommend using a wider and more flexible material for the ceiling because :
- it's hard to put up because of the curve top in a split (might crack a little)
- and mostly because the ceiling is more than 4 foot wide : you have to work AGAINST the wood grain of a 4x8 veneer sheet to bend it.
The birch veneer 1/4 I used was sold as 4x8, but I have seen airplane flexible birch veneer at the same shop that was sold in 5x5 pieces, which would better the fit the ceiling. Moreover it was way more flexible. A little more pricey but If I had to redo my split again, I would indulge in the extra cost for a better finish.
I'm not sure this would be a problem in a Vanagon since the roof is probably flatter.

I presume one could replace the tapestry/wallpaper walls/ceiling panels of a vanagon in a similar fashion...
