for sure, I feel the same way. Everyone knows that you adjust that by the splines where the steering wheel goes on the steering shaft.

but what if the best you can get that way is still off a bit ? Then you fine tune steering wheel centering with the tie rods.

and with mental gymnastics you can figure out which tie rod to lengthen or shorten to tweak the steering wheel in the direction you want it to go. It's a fun mental exercise, and very useful for getting that wheel exactly centered when going straight down the road. - and some alignment professionals don't even know about this, believe it or not. Most would of course though. They sure should.
