The lower space with the electrical wires between the water tank and the small lower cabinet next to the fridge is pretty much wasted. I've fitted an eberspacher sp? heater in there and put in a 12v connection - other heaters can fit as well. This is really nice on chilly nights.

I'd second the suggestion to insulate the walls - I used 2 layers of A/C insulation that I bought at home depot - it's about an 1/8th in thick and is a thin silver film/bubble wrap (5 layers) material. You can cut it to more or less exactly fit the spaces.

Also a good time to convert auxiliary wiring to a second battery - water pump, fridge, radio, 12v outlets, interior lighting.

The westy fridge is pretty useless. There's other options - check out gowesty's site for ideas.

New plastic utilities boxes from gowesty - really go for "no more water" behind the kitchen.

Reroute the sink water in and out - a lot of wasted space in the factory design.

I've put the front table in the back so I can open the clothes closet door without having to move the table.
