When you create the MP3 you may wish to try more than one. A variable bit rate and a couple of fixed bitrates. Compare the three or four files. As to your lousy ears - with poor hearing (high frequency loss anyone?) quality encoding is even more important. When we got a home theater system I was able to understand dialog that I couldn't with the TV's stock sound and speaker system.
