Well, the Dometic refrigerator has the standard thermocouple driven valve that in theory, and in practice, shuts off the gas at the flame, like older water heater and furnace pilot lights in homes. That's why the refrigerator doesn't pump gas out if it fails to light. My concern has always been, however, that all things fail, and in a moving vehicle, failure is perhaps more likely than in a stationary appliance at home. Gas shut off at the source provides less opportunity for failure. Leaks may be more likely in the vehicular application than in the home? At any rate, I have always followed the warning in the camper manual that says not to run the refrigerator on propane while driving, for safety reasons. That's why the thing has the battery mode.
