Ovens can be done. For that matter, Coleman makes one for placing on a camping stove grate. Should work in a VW camper, but might be a bit small (and the propane supply would dwindle during use). Might be hard to keep it cool enough for bird baking, too, though never having used one of the contraptions, I shouldn't claim to know that.

If you have time to bake a bird, why not a bed of coals and a dutch oven? Or are you talking "stealth camping, and bird baking at the same time?
