Robby--Here's a suggestion for Florida, one of the coolest things I've ever done, and January/February is prime time to do it:  swim with the manatees in Crystal River, Florida (Gulf Coast side).  Several tour operators (I used "Bird's Dive Shop"); costs about $50 each altogether for pontoon boat tour, snorkeling gear and full wetsuit.  They leave at dawn when the water is super clear; plenty of manatees to observe and even rub their bellies.  At the end of the tour, they take you to one of those crystal-clear springs, sometimes more manatees there....awesome.  Highly recommended; but the season is short (late October thru February) but you're there right now!
