As mentioned you should definitely check the cylinder head temp sensor. It is screwed into the head near the injector on the number 3 cylinder and has a single wire running out of it. You can use an ohm meter to test the sensor at cold and hot or you can also test it somewhat by either unplugging it or grounding the wire (can't remember unfortunately) while the engine is hot to see if it runs better.

Either way it's a cheap item to replace and what you describe are classic symptoms for a failing cht sender/sensor.
