I did that last year...

visors - the holes are there when ac unit removed. No problems

rad fan - mmm, that might be awkward to keep functionality. Apart from re- running wires (yes, those knobs at front unit do mean there are wires running down the overhead tunnel), there is the fun project of keeping the fan function but removing all the electrical stuff on left hand side rear panel. Be much easier to put a new circuit in for fan function.

rear panels - I used my old westy panels back there. Had to cut off some protruding screws etc that held the a/c stuff on, then screw the panels in. I have a document on my blog that has measurements of an early vanagon westy build that might be of some limited use.
