Replace the gasket block itself for best sealing. They are available as an assembly with gaskets already glued on both sides, VW Part Number 025-129-717 C. (That's the way they come in a Head Gasket Set).I never use any sealer as it could contaminate and ruin the cat converter. That being said, Permatex does make a sealer that is cat safe. I just make sure the mounting surfaces on the head and manifold are smooth, clean and install dry.

A good FLAPS should have this gasket block assembly or can get it for you.
