I'm talking about the AAZ turbo on the AAZ engine.

There is no VW documentation regarding what altitude it provides full boost to. Wasn't on the Jetta either, the mechanic at the dealer said so. The only documentation on this I've ever seen was a Porsche ad on the 944 turbo [I think, might have been the 924, long time ago] which said 5000 feet.
