I've camped from sea level to 10K feet with my 1991 Volkswagen Vanagon GL Campmobile, and used both the stove and the refrigerator (on propane) at both those levels and everything in between. I think the regulator and the orofice take care of it. It sounds like you may have a problem with pressure though, especially since your regulator has been replaced, and fooled with. I would try another thorough cleaning, and a pressure check with a manometer. I have not made one, but the instructions are online, and seem relatively easy.
