Hmmm... that's two offenses. The plate switcheroo is illegal. If some overzealous decides to run the plate while the van is being towed, there might be jail time involved in addition to possible loss of the vehicle. That's not even counting the fraud perpetrated on AAA.
The reason AAA insists on the vehicle being licensed is mostly because even towed vehicles has be be licensed as long as any of the wheels are touching the road during the process.
Just pay for a tow. It can't be that expensive of you contract it out as a non-emergency tow. For example, such a tow would cost around $175 after the first free 5 miles in AAA's basic road service program. Planned tow cost about $100. Unplanned private tow about $300.
