Any Dexron ATF will work. VW did change the recommendation from AYF to the Audi special power steering fluid to improve cold weather operation. I compromise with a synthetic ATF. To flush the system disconnect the return hose to the reservoir and place in something to collect the fluid. Start the engine and add fresh fluid to the reservoir until clean fluid comes out that return hose. Shut the engine off. Reconnect everything. Refill and start engine topping off as needed. The fluid will be foamy for a while but this will clear up.
