I have an 84 Westy with a slide out center seat. We camped with 5 for about 3 years. I also carried an extra tent and a canopy. I would store the seat under the canopy and "the boys" would sleep in the tent while "the girls" plus youngest boy would lounge in the Westy. A small trailer helped to carry all our stuff and helped to make interior of the Westy as clutter free as you can expect.
If you expect to jam two adults and three kids into a Westy, maybe a front child cot would help for the youngest one.
