Sounds like you've done a great job. The only word of caution i would add is to ensure that any weep holes located at the bottom of your door/pillar cavities are left open after your undercoating to ensure that water doesn't collect and rust start. I chose fatmat for lining the interior skin of my vans doors, panels, and floor, and have appreciated the difference in interior sound. I've just finished reskinning my door panels (driver/passenger/slider) and went with a bit thicker foam under the new vinyl and notice some sound reduction from that as well. The only part of my 91 multivan that i've not insulated with mat is the front cabin headliner area and the part of the nose that is up behind the dash. I notice a lot of wind noise from those areas and someday may get ambitious and apply there too.
