I don't recall my new drums having any protective grease on them but I installed them some time ago so it's a distant memory.

I do recall that when installing new rotors, they required several cleanings. Here's an image of the cleaning rag after the 3rd or 4th pass cleaning with Brake Parts Cleaner:
