A little confusion here...the Subject: header changes, but gmail (properly, if that's what it's trying to do) inserts it into the current thread. Since the web interface only shows you the latest message Subject: unless you expand the thread, threads that have morphed and had their subject lines changed will remain invisible to gmail web users unless they happen to be the most recent message or the user expands the thread.
