The performance dropping off after warm up and then being OK after a re-start points to a problem with the O2 sensor. The bad thermostat along with other issues probably killed the sensor and possibly the Cat. Check that ground coming off the distributor harness.

Thanks for your advice Dennis. That all makes sense....I am going to check that Temp 2 sensor first though, as it does run great every time I reset the computer (turn engine off, then on again.) I will check with her to see what work she's had done to it, although I'm pretty sure it's very little, if any. It mostly sits for months in the sun. It's a wonder any air made it through that air filter. Engineer's vehicle...and you know what they say about Cobblers' children and their shoes
