Its because instead of starting a new email that someone instead uses the reply feature and erases the existing subject. What they don't realize is that is not what most current email program including gmail use to address where to send the email. There is coding after the subject line that we don't see that isn't erased. It annoys the heck out of me and I have tried to politely email people linking them to an article explaining this. After my last time doing this the reply I got was basically threatening to kick my butt next time they see me. To bad for them I don't scare that easy and find it funny to threaten from behind a computer screen. I replied with my phone number and they didn't have the guts to call. The sad part is it really lessens the exposure to your email and the amount of response one may get. Especially if broken down and needs help quick.
