Shouldn't be impossible. Red dip for incandescent lights should be available from marine stores. Won't work so well for white LEDs as they have very little red in them.

However the gauge colors haven't been chosen with red lighting in mind (using magenta for things meant to look red, for example) so the results probably would be sub-par.
