I'm a bit late to the grill party……but here is the only way to cook with 100% wood: http://www.woodflame.com You can cook an entire meal on just a couple of small blocks of hardwood.  It does it by using a forced air system that works great.  Zero to 750 degrees in about 2 minutes…..really!  Only a tiny bit of ash will remain. They make a couple different size grills, all of which would work whilst camping. This is the best grill I have ever had.  Just watch the stainless steel edges when cleaning.  They are sharp as razors at first. No fake charcoal fumes…just flavor enhancing hard wood.  And made in Canada for all you north-centric folks!  Took several years before they sold them south of the border. I have always wanted to try wood, and may be a chance to this weekend. I have found that the hotter you want the fire, the more fuel you need to use, up to 14 briquettes from the recommended 8. You do need to make it as hot as possible when baking, and that means not taking the cover off any more than is necessary. I have made 3/4 in thick (that's how deep the pan is) cornbread before, and it helps if you flip it. Didn't take too long, though. Jim
