As mentioned before, you should check the function of the o2 sensor using a multimeter. It isn't hard to do. If you suspect a bad lead then wiggle the lead as you measure and see how the readings change.

The open loop condition, o2 sensor disconnected, is not especially rich.

A malfunctioning o2 sensor can make the van run excessively rich.

One thing that is very useful for troubleshooting your engine is the Bentley manual that includes golf Jetta 89-92. Hard to believe, but the Bentley is very handy to have.
