Luck of the draw, It's winter & you do have to at least cross the Rockies. If the weather is ok it should be a straight shot if not you'll have to chain up and/or wait it out.

Even if you went south to I-10 & up I-5/101 you could run into winter (chains &/or waiting) before you get to Washington, then you'd still have to get back over the mountain to Spokane. I'd watch the weather when you leave and decide then on the route. I'm guessing seeing as we're talking about traveling in Dec (Christmas) and that you are moving to Spokane to be closer to your grandkids (Christmas) that suggesting a slow camping trip in the Vanagon is out of the question.
