That switch can be a fussy pain to adjust. i.e. the hex head screw is made of soft metal and gets buggered easily when the parts are seized up.

Some images of one I "saved" but opted to R&R for a lower mile throttle switch assembly:

Wear at the throttle shaft can adversely affect switch adjustment. Setting the lock screw can do same. Gowesty has good articles on this. Van-cafe may have some too.
