Yes, a couple of them will interfere with the scissor action. Just cut them with a hacksaw after they are installed. It's obvious which ones need trimming and how much. Of course, the top will be upside down on saw horses when you install the hinges!

I'm going to guess that the bolt trimming advice from GW refers to the bolts holding the scissor hinge to the pop top. The bolts there, well at least couple of them per side, can interfere with the scissors if they are too long.
