Use of hose in place of copper tube may depend on where you live?
(applicable laws, rules, specs are local or national?)
Personally, I just put back what I found. (thick wall copper tube)
I understand about learning curves. Had I not had some experience with
brass, copper,
I may not have chosen to tackle the pipe R&R I did on my bus. I didn't
on my first bus.
Both my Vanagon Westies use/used a (called POL?) splitter at reg to
two copper pipes.
One to fridge, one to stove. Here's some pics of a new tank/reg install on
my Canadian '81. I removed old lines, hung the tank, had licensed RV
shop install new lines:

When dealing with fittings, be sure to put a wrench on each part.
i.e. hold whatever part steady while you undo the nut.
On Dometic fridge, the male threaded part should have a bracket around
it holding
it steady to the fridge itself. The stove does not have this.
