As far as I know, both of the old 2 terminal switches work.  I would like to
use the two new 3 terminal switches that came with the new MC, but the old
connector is a two position with different spacing compared to the 3
terminal switch.  I was also wondering if anyone has disassembled the
terminals from the two position connector and just inserted each contact on
to the 3 terminal switch and if so which wire to which terminal?

Or I can just switch the switches like Michael said.

Use the two that work?  There will be a common terminal, a normally-open
one, and a normally-closed one.  You want common and NC, i.e. the pair that
make contact when you push on the pedal.  If that pair doesn't fit the
configuration doesn't fit the Vanagon connector then you  have a decision to
make.
