There are numerous discussions on Samba about this, and opinions and feelings vary widely enough that you'd expect folks to come to blows.  I'm firmly on the LEAVE IT side.  My '87 had complete but non-working A/C when I bought it and living in Virginia would never consider doing without it just as I'd never consider buying a vehicle that did not already have it.  If you live in the far north and never encounter a 90 degree day, there might be reason to do without but if you ever expect to sell your van and have removed the A/C (neatly or not) you'll have excluded a large portion of the buying public as potential customers.  As someone wisely stated in one argument, "Need more space?  Pack lighter."
I recently made a quick trip to Florida.  Nice and cool when I left Richmond on Wednesday, but by Sunday Miami was seeing 97 and I was never happier to have functioning A/C.  Hey, I'm a wuss and proud of it.
