Anything can be done, but it's not always a good idea.
If you have A/C the hoses run inside the closet, and for '85 and older the A/C cabinet attaches to the closet as well as the upper bed panel. You'll have to drop the A/C (all of it, including the plenum) to get the closet out of the van. In '86 and newer, there is a hose junction and electrical components you will need to build a cover for. Earlier A/C has just hoses running up the front inside edge of the closet--impossible to relocate without new longer ones routed up from the back corner like the later vans. Early A/C is useless anyway, so just rip it out, but save the cabinet--it can be converted back into an upper cabinet (BTDT) and are rare.
To get the wider seat/bed in, you need to find one first, and that cubby cabinet holds the water jug, so that has to be replaced with something else somewhere else, or give up water.
Might be better to look for a weekender rather than significantly lower the value of the full camper by doing this.

Has anyone ever removed the closet and cubby behind it to get more room for a bigger bed? I can haul the stuff I need in crates bags, I don't need the closet or the cubby. Con't know why I haven't thought of this before.
