Jim: is there a restrictor somewhere in the diesel spider hose or other coolant hose? Is it present or is it needed with your upgraded engine?

From yet another but different POV, on my Jetta engine swap, the hose from bottom of coolant bottle goes to an OEM steel junction "T" of sorts:

which interfaces with heater hose and engine. It's set up as per OEM in a Mk3 Jetta. Temps have always been dead nut steady.
