I did that road back in 1992. Only 1 spare. Stones did throw the power steering belt a few times. No flats. The rear tires were shot by the time we got home after that trip though. How I missed those Bridgestone Potenzas.
What he needs is to choose a tire size that is readily available. Since his van is a 2WD in pinch anything that will wrap around the wheel will get him moving. There are so many other single points of failure and the only way for full redundancy is another vehicle.
February 2015 driving the RV down to Florida day after a broken exhaust started a fire in the bedroom closet we had a right front tire blow out. Destroyed the tire and wheel. Coach Net found both for us. Towed us to a truck stop that had the wheel and then to truck stop that had the tire. Keep in mind this was 22.5" aluminum wheel and a 275/70-22.5 load range "J" tire.

RMW, Go Westy, and Burley all have very nice rear racks/rack systems. No personal experience.

Hoping to do ome serious traveling this summer, and from sad experience, determined I have need of carrying two spare tires. They will be oversize, so the carrier under the van front has to be modified. Waiting on BenT's new gadget o fix that. For spare tire #2 I would like to mount it on the rear of the van somehere. On a swing out mount, maybe. Anyone with experience with rear mounts. Can you refer me to a source or vendor. There used to be someone who made mounts, carrier racks, etc, on this list but I have forgotten the name.Annyone remember?
