I used these lights for Lee Valley: http://www.leevalley.com/US/wood/page.aspx?p=71702&cat=1,43349&ap=1. The covers are plastic but the channels are aluminum. I put a strip the whole length above the table/sink/stove, but switched it so two halves were controlled by separate switches. I also put one in the aluminum channel above the rear seat to illuminate the table when it's pulled out. That made a big difference for the person sitting on the passenger's side.
