I know that the stud and bolt that fasten the starter to housing should suffice but would wonder if adding sealant, or the wrong type of sealant, or too much, would inhibit ground path to starter at all?

Were it me, I'd use an anaerobic type sealant as I think that's what the VW stuff is.
