Neil, Karl's adapter and a Bosch starter work great; that's what I used to replace the starter on my 2.2 Subie engine conversion (with the KEP plate). One thing you will need to do to the starter however is file a "notch" in the aluminum flange of the starter to provide clearance for one of the mounting bolts. I used a 1/2" diameter round file to accomplish this; only took 10 minutes of filing. The size of this "notch" is about the size of a nickel. So if you are on the road a stop at Home Depot or equivalent to buy a file might be necessary.
Just don't want you to get halfway into the job to discover this...
Somewhere there is a photo of this "notch"....I can't seem to find it. Maybe someone else can send a link.

This makes more sense now; the kep or whatever set up is designed for the
original Bosch starter to work properly.
I was, and may still be leaning towards your adaptor plus TDI starter
setup, but am Leary of trying to remove the starter stud at clutch housing
while on this road trip; I'm not equipped to deal with a snapped stud....
If I'm not misunderstanding the instructions I see on vancafe a web page.
