The reply choice at the bottom refers to the last message in the thread. Reply-all is still available for previous messages by using the dropdown menu at the top right of each message.

The only way I've found to trim quoted content is to open it up by clicking on the boxed ellipsis at the bottom left (which reveals the quoted history) and then dragging a selection box over it and hitting delete. The box will scroll if you drag the cursor below it.
