Vinyl flooring, especially good quality stuff, is very durable, works well on a floor. You might ask a cabinet shop about the application you are proposing. When I redid home kitchen cabinets, some shops did have vinyl material they used for cabinet tops. I elected not to use it, going for a quartz cabinet top instead. But it was offered. Generally, folks who want plastic cabinet tops go for something like Formica brand material, which is a bit more resistant to dents and cuts than vinyl.
