Some other ideas for establishing value for insurance purposes.

Go Westy offers a "valuation" based on photos, receipts, etc. If you have all your receipts (and you can pull all your orders from our vendor's websites), build a spreadsheet and collect your photos of the van, anything and everything, and with any view (partial or otherwise). Hopefully, you have dozens. Call them and see what they can do to help you establish the value of your van. I've heard that State Farm for one has accepted their valuations.

I think this could help you a great deal in Wisconsin where there are not that many Vanagon Westies and adjusters aren’t familiar with their value. $250 could get you thousands from your insurance company: http://www.gowesty.com/product-details.php?id=23894.

Do all the other stuff suggested too, and fight like hell so you can collect enough money to get another one!

In our area of the country, having structures burn down due to animals is not that uncommon. About 10 years ago, a neighbor's barn burned down. It was determined that a Raccoon had chewed on things. He had a lot of equipment damage, but no livestock.
