The Asheville area is known for "aggressive water." It wants to leach elements out of what it touches. If you are using Asheville city water, they add some substances to reduce that characteristic so that it doesn't pull lead and copper out of pipes and into the water. My water level thing has never worked very well either and now I wonder if that is part of the issue. Trying the salt addition is a good idea!

I've been playing with arduino off and on for a while and this seems like an application for that. it could probably be configured to read the water contacts such that there would be more leeway as far as all the connections being perfect and variations in water source. And then you could also set the voltage level lights to switch at specific voltages. And then you could set the fridge flame light to do special things like flash if it senses no flame after having sensed flame since last power cycle. I would want to keep the stock panel with the lights but more functionality would be nice.
