Sorry, it really is a flame detector that lights up when the thermocouple
is hot enough (more or less) to keep the gas valve open.  Having it light
up when on DC is an artifact that many of them are subject to.  It
shouldn't do it, but it does no harm to speak of.  I'm sure it's a
grounding issue that comes to light when you stick seven amps into the
fridge -- the flame LED has a programmed gain of IIRC 330, so a ground
shift of 20 millivolts is more than enough to begin to light up the LED.

Any modern high-brightness LED should be able to be substituted in without
having to change the current-limiting resistor.
