It is true that the salt does not evaporate into the air.  But weather
events result in sea water mist in the air at times.  The mist, which is
water droplets picked up from the sea surface by wind, not evaporation,
contains sea salts.  The smell that people associate with the sea is not
salt, but the organics in the mist, and organics from muds, sands, plants,
and sea weeds exposed at low tide.
