I have a similar solar panel arrangement and a truck fridge replacing the Norcold frig in a 95 EVC. I find that when I am parked where sun is not strong all day and plugged into shore power that I can clip a jumper across the solenoid in the engine compartment and keep the starter battery charged as well. My satellite radio and the van radio run off that battery so that keeps the charge up and lets me listen to my favourite stuff. Once when I forgot to clip the jumper back after a grocery trip, the battery was below starting power. Hooked up the jumper and a half hour later it was back to full function.

PS Just realized this was a vanagon list thread so the solenoid present in my EVC is not part of the configuration in the vanagon, which I have also had years of experience with, but not with solar panels. I suspect there might be a way to do a double charge from the house battery to the starter battery with a jumper to bypass the relay if needed, but the details of the circuitry are not in my brain for the vanagon..
