 I followed Ben's advice (below).  It works!  So when I check Spam and see a Vanagon guy email, I click on the address while in the Spam folder, and choose "Add to Contacts".  Amazing.  Spam folder keeps shrinking, and Inbox keeps growing.  Nice to get this issue resolved, one by one.
(Contact List or Address Book or whatever you want to call it keeps growing, but that's ok, it's free.)
