No way! I've heard that the filling and bleeding on the 1.9L '83-'85 wasserboxers was quite an ordeal but I've done my 2.1L '87 & '88 several times, and while it's a bit of a tricky procedure (compared to "normal" cars) it takes me about 45-60 minutes total to change the coolant.

5 hours is way too high. I can't think of any reason that the oil cooler would need to be removed. In my opinion the hoses should take about an hour. Allowing an hour for the coolant change is a 2 hour total. I'd do it myself or call a couple of independent shops if I were you.
